Cake Glossary

Need to brush up on your cake terms, here is a little help with that!

Buttercream~ Rich, traditional frosting and filling made of butter, eggs, and sugar.
Ganache~ A glaze (often chocolate) used as an icing or filing.
Dragees~ Tiny, decorative sugar balls, covered in edible gold or silver paint.
Gold Leaf~ Ultra thin edible gilding used to add metallic flourish.
Fondant~ A glossy, malleable icing made with sugar, water, and flavoring that's used to cover a cake like a smooth blanket.
Marzipan~ Almond paste used to cover a cake; often sculpted into accents like flowers and fruits.
Genoise~ Light and airy sponge cake, often moistened with flavored syrups or liqueurs.
Gum-Paste~ A sugar, starch, and gelatin mixture that's molded into flowers and ribbons.
Piping~ Fine, decorative lines or edges applied with a pastry bag.
Royal Icing~ A mixture of confectioner's sugar and egg whites that dries to a hard consistency- best for flowers and piped designs.
Pastillage~ Similar to gum-paste; it dries to a hard finish and is perfect for making columns and figures.
Tiers~ The layers of a cake that can be either stacked (the modern look) or separated (using dowels or columns).

Thank You Note Ettiquette

In this day and age, is the bride still supposed to write all of the thank-you notes? What if there are relatives of the groom that the bride has never met? Is it ok to have him help write the notes, or is the bride who should write them all?

The days when thank-you notes were the sole duty of the bride are over. Today's couples share this responsibility, which helps the job go faster. It also makes personalizing the notes easier; each of you can write the people you know best. But you may also write to each other's relatives and friends-a great step towards building new relationships.

1 Week Before the Wedding

Here is a wedding countdown for the items that need to be taken care of 1 week before the big day:

1) Place all fees due on the day of the wedding in envelopes
2) Give the caterer a final head count
3) Appoint a reliable friend to transport the cak knife, toasting glasses, and/or other heirlooms to and from the reception site
4) Get final beauty treatments (facial, waxing, brows, etc)
5) Pack for the honeymoon- ask somebody to bring your luggage to the reception if you are leaving from there.

5) Write your rehearsal dinner toast

Here is a wedding countdown for the items that need to be taken care of 2-4 months before the big day:

1) Call the county clerk's office to find out about the marriage license requirements
2) Get the tuxs for both the groom and the groomsmen ordered
3) Meet with the caterer or banquet manager to discuss menus, the type of service you will have, bar style, etc.
4) Order the wedding cake
5) Select your ceremony and reception music
6) Buy thank-you gifts for your attendents
7) Choose favors and welcome baskets
8) Shop for and order wedding bands
9) Meet with any party rental company you may be using
10) Book a room for your wedding night
